Tuscan Shrimp & Orzo

Ingredients

  • Large Wild-Caught Shrimp
  • Orzo Pasta
  • Sun-Dried Tomatoes
  • Fresh Baby Spinach
  • Garlic Cloves
  • Heavy Cream
  • Chicken or Vegetable Broth
  • Parmesan Cheese
  • Lemon
  • Fresh Parsley

Instructions

  1. Cook orzo pasta in salted boiling water until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side.
  4. Stir in heavy cream, chicken or vegetable broth, and sun-dried tomatoes, simmering for 5 minutes.
  5. Add cooked orzo, fresh baby spinach, and grated parmesan cheese, stirring until spinach wilts and sauce thickens.
  6. Season with salt, pepper, and lemon juice to taste.
  7. Garnish with chopped fresh parsley and serve immediately with lemon wedges.
