Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 (10 oz) package cheese tortellini
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach, roughly chopped
  • 8 oz mushrooms, sliced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large skillet over medium heat, brown the sausage, breaking it up with a spoon, until fully cooked. Transfer to a slow cooker.
  2. Add the chicken broth, heavy cream, sun-dried tomatoes, mushrooms, spinach, Parmesan cheese, thyme, red pepper flakes, salt, and black pepper to the slow cooker. Stir to combine.
  3. Add the tortellini and stir gently to distribute evenly.
  4. Cover and cook on LOW for 4 hours, or until the tortellini is tender and the sauce has thickened slightly.
  5. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
