Ingredients

  • 8 oz dried soba noodles
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp chili-garlic sauce
  • 1/2 English cucumber, julienned
  • 1 red bell pepper, julienned
  • 2 green onions, sliced
  • 2 tbsp roasted peanuts, chopped
  • 2 tbsp toasted sesame seeds

Instructions

  1. Cook the soba noodles according to package instructions, then rinse under cold water and drain well.
  2. In a large bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, minced garlic, grated ginger, and chili-garlic sauce to create the dressing.
