Ingredients

  • 8 oz soba noodles
  • 1 bell pepper (red), thinly sliced
  • 1 cup shredded carrots
  • 1 cup shelled edamame
  • 2 green onions, sliced
  • 1/4 cup cilantro, chopped
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp grated ginger
  • 1 clove garlic, minced
  • 1 tsp sesame oil
  • 1 tbsp toasted sesame seeds

Instructions

  1. Cook the soba noodles according to package instructions until al dente, then rinse under cold water and drain well.
  2. In a large bowl, combine the cooked noodles, bell pepper, shredded carrots, edamame, green onions, and cilantro.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, honey, grated ginger, minced garlic, and sesame oil to create the dressing.
  4. Pour the dressing over the noodle mixture and toss to combine thoroughly.
