Rosemary Harissa Brioche Buns

Ingredients

  • 1 cup warm milk
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon salt
  • 3 1/2 cups bread flour
  • 1/4 cup harissa paste
  • 1/2 cup crumbled feta cheese
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon flaky sea salt

Instructions

  1. In a bowl, combine warm milk, yeast, and 1 tablespoon sugar. Let sit for 5 minutes until foamy.
  2. Add melted butter, remaining sugar, egg, salt, and 3 cups flour. Mix until a shaggy dough forms.
  3. Knead on a floured surface for 8-10 minutes until smooth and elastic, adding remaining flour as needed.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour until doubled.
  5. Punch down dough and divide into 6 equal portions. Roll each portion into a thin rectangle.
  6. Spread 1 teaspoon harissa paste evenly over each rectangle. Sprinkle with feta and rosemary.
  7. Roll up each rectangle tightly from the long side, then coil into a spiral shape.
  8. Place buns on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
  9. Preheat oven to 375°F (190°C). Brush buns with egg wash and sprinkle with sea salt.
  10. Bake for 20-25 minutes until golden brown. Cool slightly before serving.
