Ingredients

  • 2 cups mixed greens (kale, lettuce)
  • 1 cup cooked farro or barley
  • 2 cups roasted sweet potato cubes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup roasted chickpeas or lentils
  • 1/4 cup pumpkin seeds
  • 1/4 cup pine nuts
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh mint, chopped
  • 1/4 cup green goddess dressing or tahini-lemon dressing
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper. Roast for 25-30 minutes until tender and caramelized.
  2. Cook farro or barley according to package instructions. Drain and cool slightly.
  3. In a large bowl, combine mixed greens, cooked grains, roasted sweet potatoes, cherry tomatoes, and roasted chickpeas or lentils.
  4. Drizzle with green goddess dressing and toss gently to combine.
  5. Top with pumpkin seeds, pine nuts, fresh dill, and mint.
  6. Serve immediately or chill for 15 minutes to let flavors meld.
