Roasted Lemon-Herb Carrots & Whipped Feta

A one-pan easy zesty side dish featuring roasted carrots with lemon-herb seasoning and whipped feta.

Ingredients

  • carrots
  • olive oil
  • lemon juice
  • fresh dill
  • fresh thyme
  • salt
  • black pepper
  • feta cheese
  • garlic
  • honey

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cut carrots into 4-inch sticks.
  3. In a bowl, toss carrots with olive oil, lemon juice, minced garlic, chopped dill, thyme, salt, and pepper.
  4. Spread carrots on a baking sheet in a single layer.
  5. Roast for 20 minutes, or until tender and slightly caramelized.
  6. While carrots roast, prepare whipped feta by blending feta cheese with a splash of lemon juice, olive oil, and fresh herbs until smooth.
  7. Remove carrots from oven and transfer to a serving bowl.
  8. Top with dollops of whipped feta and garnish with additional fresh herbs and a sprinkle of red pepper flakes.
  9. Serve warm as a side dish.
