Instructions Preheat oven to 400°F (200°C). Peel and cut carrots into 4-inch sticks. In a bowl, toss carrots with olive oil, lemon juice, minced garlic, chopped dill, thyme, salt, and pepper. Spread carrots on a baking sheet in a single layer. Roast for 20 minutes, or until tender and slightly caramelized. While carrots roast, prepare whipped feta by blending feta cheese with a splash of lemon juice, olive oil, and fresh herbs until smooth. Remove carrots from oven and transfer to a serving bowl. Top with dollops of whipped feta and garnish with additional fresh herbs and a sprinkle of red pepper flakes. Serve warm as a side dish.
