Ingredients

  • 4 ripe peaches, sliced
  • 2 cups mixed heirloom cherry tomatoes, halved
  • 1 ball fresh burrata cheese
  • 4 slices sourdough bread, toasted and cubed
  • 1/4 cup pistachios, shelled and roughly chopped
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make the citrus vinaigrette.
  2. In a large serving bowl, combine the sliced peaches, halved tomatoes, and toasted sourdough cubes.
  3. Gently toss the salad with half of the citrus vinaigrette to coat the ingredients.
  4. Arrange the dressed salad on a large platter or serving plate.
  5. Place the burrata in the center of the salad and drizzle with the remaining vinaigrette.
  6. Garnish with chopped pistachios, fresh basil leaves, and a final sprinkle of black pepper.
  7. Serve immediately.
