Ingredients

  • 1 can (7 oz) quality canned tuna, drained and flaked
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 cups fresh rocket (arugula)
  • 1/2 small red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup pitted Kalamata olives, halved
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the arugula, cannellini beans, cherry tomatoes, red onion, and olives.
  2. Add the flaked tuna to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, parsley, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or chill for 15 minutes to let the flavors meld.
