Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup cooked farro
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup Persian cucumbers, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup herbed tahini dressing
  • 1 lemon wedge, for serving
  • 1/4 cup extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large bowl, combine cooked farro, cherry tomatoes, Persian cucumbers, red onion, feta cheese, dill, and mint.
  2. In a separate bowl, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper.
  3. Heat a grill pan or skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and opaque.
  4. Divide the grain mixture among four bowls and top with grilled shrimp.
  5. Drizzle with herbed tahini dressing and garnish with a lemon wedge.
