Ingredients

  • 1 can (15 oz) chickpeas, rinsed
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1/2 red onion, finely diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, pitted
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the rinsed chickpeas, halved cherry tomatoes, diced cucumber, and finely diced red onion.
  2. Add the crumbled feta cheese, pitted kalamata olives, and chopped fresh parsley to the bowl.
  3. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, salt, and black pepper to create the dressing.
  4. Pour the dressing over the salad ingredients and gently toss to combine everything evenly.
  5. Taste and adjust seasoning if necessary before serving immediately or chilling for 30 minutes to allow flavors to meld.
