Ingredients

  • 4 cups fresh arugula
  • 2 ripe peaches, sliced
  • 2 ripe plums, sliced
  • 1 cup blackberries
  • 1 cup raspberries
  • 1/2 cup blueberries
  • 2 balls fresh burrata cheese
  • 1/4 cup shelled pistachios, roughly chopped
  • 1/4 cup fresh mint leaves, torn
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a large, shallow serving bowl, arrange a bed of fresh arugula.
  2. Artfully arrange sliced peaches, plums, blackberries, raspberries, and blueberries over the greens.
  3. Place two balls of fresh burrata cheese on top of the fruit and greens.
  4. Drizzle the burrata and salad with extra virgin olive oil and balsamic glaze.
  5. Sprinkle chopped pistachios and torn mint leaves over the entire salad.
  6. Season with flaky sea salt and freshly ground black pepper to taste.
  7. Serve immediately.
