Matcha Coconut Muffins

Ingredients

  • 2 mashed ripe bananas
  • 1 tbsp matcha green tea powder
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut (for batter & toasted topping)
  • 1 large egg
  • 1/2 cup coconut milk
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 6-cup muffin tin with paper liners.
  2. In a large bowl, whisk together mashed bananas, egg, coconut milk, melted coconut oil, honey, and vanilla extract until smooth.
  3. Sift in all-purpose flour and matcha green tea powder, then fold in until just combined.
  4. Gently fold in 1/2 cup of the shredded coconut into the batter.
  5. Divide batter evenly among the 6 muffin cups, filling each about 3/4 full.
  6. Sprinkle the remaining shredded coconut evenly over the top of each muffin.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
