Ingredients

  • Lean Ground Beef (No Pork)
  • Russet Potatoes
  • Taco Seasoning
  • Cheddar Cheese
  • Fresh Avocado
  • Diced Tomatoes
  • Green Onions
  • Sour Cream
  • Fresh Cilantro (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Dice russet potatoes into 1-inch cubes and toss with 1 tablespoon olive oil and 1 tablespoon taco seasoning.
  3. Spread potatoes on a baking sheet and roast for 25-30 minutes, or until golden brown and tender.
  4. While potatoes roast, cook lean ground beef in a skillet over medium heat until browned, about 8-10 minutes. Drain excess fat.
  5. Stir in remaining taco seasoning and cook for 1 minute more.
  6. Divide roasted potatoes among four bowls.
  7. Top each bowl with cooked ground beef, shredded cheddar cheese, diced avocado, diced tomatoes, sliced green onions, and a dollop of sour cream.
  8. Garnish with fresh cilantro if desired and serve immediately.
