Ingredients

  • 2 skin-on chicken breasts
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 lemon (zested & juiced)
  • 1 Tbsp fresh thyme leaves
  • 1 tsp paprika
  • Salt & black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, fresh thyme, paprika, salt, and black pepper.
  3. Place chicken breasts in a baking dish and pour the marinade over them, ensuring they are well coated.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 5 minutes before slicing.
  6. Garnish with fresh parsley and serve with a lemon wedge.
