Lemon Garlic Sautéed Shrimp and Asparagus

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 3 cloves garlic, minced
  • 2 lemons, thinly sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque.
  4. Remove shrimp from the skillet and set aside.
  5. Add asparagus to the same skillet and sauté for 5-7 minutes until tender-crisp.
  6. Return shrimp to the skillet, add lemon slices, and toss everything together for 1 minute.
  7. Garnish with fresh parsley and serve immediately.
