Ingredients

  • 1 lb ground beef
  • 4 russet potatoes, peeled and cubed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 ripe avocado, diced
  • 1 cup diced vine-ripened tomatoes
  • 1/4 cup finely chopped green onions
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potato cubes with garlic powder, onion powder, paprika, salt, and black pepper.
  3. Spread potatoes on a baking sheet and roast for 25-30 minutes until golden and crispy.
  4. While potatoes roast, cook ground beef in a skillet over medium heat until browned, about 8-10 minutes.
  5. Drain excess grease from the beef.
  6. In a large bowl, combine roasted potatoes, cooked ground beef, shredded cheddar cheese, diced avocado, diced tomatoes, and chopped green onions.
  7. Top with a generous drizzle of sour cream.
  8. Serve immediately in a bowl.
