Grilled Salmon with Roasted Potatoes and Arugula

Ingredients

  • 1 (6-8 oz) salmon fillet, skin-on
  • 1 lb small yellow potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 3 cups fresh arugula
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tbsp extra virgin olive oil (for dressing)
  • 1/4 tsp salt (for dressing)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss halved potatoes with 1 tbsp olive oil, dried dill, garlic powder, black pepper, and salt.
  3. Spread potatoes on a baking sheet in a single layer and roast for 20-25 minutes, or until golden and tender.
  4. While potatoes roast, season salmon fillet with salt and pepper.
  5. Heat 1 tbsp olive oil in a skillet over medium-high heat. Place salmon skin-side down and cook for 4-5 minutes until skin is crispy.
  6. Flip salmon and cook for another 3-4 minutes, or until cooked through.
  7. In a small bowl, whisk together lemon juice, honey, extra virgin olive oil, and salt to make dressing.
  8. In a large bowl, toss arugula with dressing until lightly coated.
  9. Plate the roasted potatoes, top with the cooked salmon, and serve with the fresh arugula salad on the side.
