Ingredients

  • 1 lb salmon fillet
  • 1 cup quinoa
  • 1 cup water
  • 1 zucchini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1/4 cup dill, chopped
  • 1/4 cup sesame seeds
  • 1/4 cup poppy seeds
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup rice vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions.
  2. Season salmon with salt, pepper, and dill.
  3. Grill salmon for 4-5 minutes per side, or until cooked through.
  4. Toss zucchini and yellow squash with sesame seeds, poppy seeds, and dill.
