Ingredients

  • 2 cups cooked farro
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, grilled and chopped
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, cubed
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons capers
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup green pesto
  • Salt and pepper to taste

Instructions

  1. Cook farro according to package instructions until tender, then drain and cool.
  2. In a large bowl, combine the cooked farro, cherry tomatoes, cucumber, grilled red bell pepper, olives, feta cheese, pine nuts, and capers.
  3. Add the chopped basil and mint, then drizzle with green pesto.
  4. Season with salt and pepper to taste and toss gently to combine all ingredients.
  5. Serve immediately or chill for 30 minutes to let flavors meld.
