Grain Bowl with Salmon, Asparagus, and Tomatoes

Ingredients

  • 1 salmon fillet
  • 1 cup mixed grain blend (quinoa and wild rice)
  • 1 bunch asparagus, trimmed
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook the grain blend according to package instructions.
  3. Season salmon with salt, pepper, and lemon zest.
  4. Place salmon on a baking sheet and bake for 12-15 minutes until cooked through.
  5. Toss asparagus with 1 tbsp olive oil, salt, and pepper, then roast for 10-12 minutes until tender-crisp.
  6. Roast cherry tomatoes with the remaining olive oil for 10-12 minutes until blistered.
  7. Assemble the grain bowl with cooked grains, salmon, asparagus, and roasted tomatoes.
  8. Garnish with fresh herbs and serve.
