Ingredients

  • 1 1/2 cups oat flour
  • 1/2 cup coconut sugar
  • 1 tsp turmeric
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 1/2 cup olive oil
  • 1/2 cup coconut milk
  • 1/2 cup candied ginger, chopped
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together oat flour, coconut sugar, turmeric, ground ginger, black pepper, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together olive oil, coconut milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped candied ginger.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
