Crispy Quinoa Almond Clusters (No-Bake!)

A no-bake, gluten-free snack crafted from whole puffed quinoa, chopped roasted almonds, rich cocoa, and pure maple syrup.

Ingredients

  • 1 cup whole puffed quinoa
  • 1/2 cup chopped roasted almonds
  • 1/4 cup pure maple syrup
  • 1/4 cup rich cocoa powder
  • 1/4 teaspoon sea salt
  • 1/4 cup chopped almonds for topping

Instructions

  1. In a large bowl, combine the puffed quinoa, chopped roasted almonds, cocoa powder, and sea salt.
  2. In a small saucepan over low heat, warm the maple syrup until it begins to bubble slightly.
  3. Pour the warm maple syrup over the dry ingredients and stir thoroughly until evenly coated.
  4. Transfer the mixture to a parchment-lined baking sheet and press down firmly to form clusters.
  5. Sprinkle chopped almonds on top and press gently to adhere.
  6. Allow to cool completely at room temperature for 10 minutes until set and crisp.
  7. Break into clusters and store in an airtight container for up to 1 week.
