Summer Chicken Platter with Hummus

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill
  • 1 teaspoon black pepper
  • 1 teaspoon black sesame seeds
  • 1 cup hummus
  • 2 tablespoons pine nuts
  • 1 teaspoon paprika
  • 1/2 cup raspberries
  • 2 plums, halved and pitted
  • 2 apricots, halved and pitted
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 cup radishes, thinly sliced
  • 6 whole grain crackers
  • Fresh dill sprigs for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, dried dill, black pepper, and black sesame seeds.
  3. Rub the chicken breasts with the spice mixture and place on a baking sheet.
  4. Bake for 20-25 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
  5. Let chicken rest for 5 minutes, then slice into strips.
  6. Arrange sliced chicken, crackers, hummus, raspberries, plums, apricots, bell peppers, and radishes on a large platter.
  7. Garnish with fresh dill sprigs and pine nuts on top of the hummus.
  8. Serve immediately.
