Instructions

  1. Preheat grill to medium-high heat.
  2. Season lamb loin with salt and pepper.
  3. Grill lamb loin for 4-5 minutes per side for medium-rare, or until desired doneness.
  4. Let lamb rest for 10 minutes, then slice thinly.
  5. Cook farro according to package instructions, then cool.
  6. Toss cooled farro with baby spinach, roasted tomatoes, grilled red onion, pistachios, ricotta salata, fresh basil, and fresh mint.
  7. Season with salt and pepper to taste.
  8. Plate salad and top with sliced char-grilled lamb loin.
