Ingredients

  • 1 (2 lb) beef roast
  • 1/2 cup crumbled blue cheese
  • 1/2 cup chopped spinach
  • 1/2 cup sliced red onions
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Make a deep cut into the beef roast and stuff with blue cheese, spinach, and red onions.
  3. Season the roast with salt and pepper.
  4. Heat olive oil in a cast iron skillet over medium-high heat.
  5. Sear the roast on all sides until browned.
  6. Transfer the skillet to the oven and roast for 1 hour or until internal temperature reaches 145°F.
  7. Let the roast rest for 10 minutes before slicing and serving.
