Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups zucchini noodles (spiralized)
  • 1 cup roasted cherry tomatoes
  • 1/2 cup fresh basil leaves, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 cup pesto sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss zucchini noodles with olive oil, garlic powder, salt, and black pepper.
  3. Spread zucchini noodles evenly in a white baking dish.
  4. Place chicken breasts on top of the zucchini noodles.
  5. Brush each chicken breast with pesto sauce.
  6. Top each chicken breast with roasted cherry tomatoes and shredded mozzarella cheese.
